  1. In a mixing bowl add 3 tablespoons olive oil, oregano, garlic and some salt and pepper and mix well to combine. Then clean mushrooms with a damp paper towel and take stems out and put mushrooms in a large zip lock bag and pour marinade over the top ( put them in the refrigerator for at least an hour or as long as you want)
  2. Then in a second mixing bowl add the mozzarella cheese, parmesan and flat leaf parsley and set aside
  3. Meanwhile take the mushrooms out of the marinade and place on a lined baking sheet and cook at 375 degrees for about 15 minutes and then take out of the oven
  4. Next top and fill each mushroom with marinara and then the cheese mixture and put them back in the oven and cook for about 10 minutes or until done
  5. If putting these on a serving platter for appetizers make sure you set them on a paper towel to drain first 🙂
