  1. Preheat the oven to 375 degrees. Cook the cauliflower florets in a pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  2. Meanwhile, in a pan on medium heat add 1 tablespoon olive oil and 1 tablespoon of butter and add in the onion- a pinch of salt and cook for about 6 minutes until tender and then add in the garlic and cook another 2 minutes.
  3. Next add in the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the milk into the butter-flour- onion mixture and stir until it comes to a boil. Boil, whisking constantly, for about 4 minutes, or until thickened.
  4. Turn off the heat, add some salt, the pepper, nutmeg, and 3/4 cup of the parmesan cheese and mix well to combine.
  5. Spray the bottom of an baking dish with cooking spray and place the drained cauliflower on top and then pour the cheese mixture evenly on top.
  6. Then in a small bowl combine the bread crumbs, cheese and parsley and sprinkle on top and then take the other tablespoon of butter and with your fingers break apart the butter into pieces and put it on top of the breadcrumb mixture ( this will help the top to brown in the oven )
  7. Bake for 25 to 30 minutes, until the top is browned. ( at the end if top is not browned just switch oven to broil and let the top get brown about 3-4 minutes is all it takes and serve! 🙂
