  1. Take a head of cauliflower and cut it into pieces. Then put cauliflower pieces into a food processor and pulse until it looks like a rice consistency
  2. Next on a baking sheet coated with a little cooking spray spread out the cauliflower and bake for about 15 minutes at 375 degrees
  3. After cauliflower is done wait until it cools slightly then put cooked cauliflower into kitchen towel or cheesecloth and get all the water out of it- you need to squeeze for a while and make sure all the moisture comes out ( kind of a pain but needs to be done 🙂
  4. Next, in a mixing bowl add the parmesan cheese, cauliflower, egg, fresh herbs, garlic power , Italian seasoning and some salt and pepper and mix to combine well
  5. Next take a baking sheet lined with parchment paper and sprayed well with cooking spray then spread the cauliflower mixture out with your hands ( I make a circle ) to form a crust - make sure it is not too thin bc you won't be able to get it off the pan easily ( I have made that mistake before and it's hard to get crust off without breaking it )
  6. Bake at 400 degrees for about 15- 20 minutes checking it until top is golden and sides have formed a crust - then take back out of the oven
  7. Top it with marinara sauce and mozzarella cheese ( I also use a cheese blend ) and put it back in just until everything is warm and the cheese is melted and serve! (I sometimes top it with fresh basil at the end)
