  1. Make the rice according to package instructions and set aside. Next, blanch the broccoli in a pot of boiling water for 3 minutes and then rinse with cold water and set aside.
  2. In a sauté pan add the olive oil and set on medium/ high heat and add the chicken pieces and season with the garlic powder, onion powder and some salt and pepper . Cook stirring around about 6 minutes until no longer pink but not cooked all the way through and set aside.
  3. Next, in a large bowl add in the chicken soup, mayo, sour cream, chopped parsley and some salt and pepper and mix well to combine. Next, add in the chicken, broccoli, 1/3 cup of the cheese and rice and mix all together to combine.
  4. Last, spray a baking dish with cooking spray and add the casserole mixture, then top with the rest of the shredded cheese and bake at 350 degrees for 35 minutes yes and enjoy!
