Place the chicken pieces in a bowl and add the olive oil, garlic powder and some salt and pepper and mix well to combine.
Next, in a large sauté pan add the chicken and cook 8-10 minutes until golden brown and cooked through and set aside to cool a bit.
The next step is to just assemble take any skewer you have and start with a tomato, then a basil leaf, chicken, mozzarella ball, another basil leaf and then top with another tomato and serve.
I love to eat these just plain, but when I do serve these for a get together I place two different dressing on the side for people who want to pour some over before eating. 🙂
