Instructions
  1. In a mixing bowl add all the ingredients for the chicken meatballs and mix to combine. Then with a teaspoon or small ice cream scooper add a ball size amount to a baking sheet sprayed with olive oil cooking spray and then spray the tops of the meatballs also . Then bake the meatballs at 400 degrees for about 10 minutes.
  2. Meanwhile, in a large pot add the oil, chopped onion and a pinch of salt and cook for about 6 minutes and then add in the garlic and dried thyme and cook another 3 minutes. Next add in the chicken broth, lemon juice, chicken meatballs, pinch of red pepper, parmesan rind and some salt and pepper and cook for about 20 minutes.
  3. Last, cook the tortellini to package instructions and set aside. Then right before serving add the kale to the soup and cook a few minutes until wilted and then add soup to bowl with some tortellini and serve!
  4. I created the soup the other night and it was so amazing my daughter said it was her new favorite soup! 🙂
