  1. In a large mixing bowl cracked eggs in and add milk, parsley and some salt and pepper and whisk to combine - set aside
  2. Meanwhile in a pan on medium heat add in shallots and cook about 4 minutes until soft and then add in the garlic and cook another 2 minutes
  3. Next add in the chicken, mushrooms and some salt and pepper and cook another 5 minutes then add in the egg mixture ( make sure it evenly coats all the mixture ) and cook until the sides start to set - I take a plastic baking spatula and go around the sides of the pan to make sure it has pulled away from the sides and is ready takes about 5-6 minutes
  4. Then sprinkle the goat cheese all over the top and transfer to the oven and broil it for about 3 minutes or until the top has cooked and is slightly golden and serve!
