Boil the orzo in the chicken broth and then leave in the pot and do not drain and set aside.
Add the oil a large sauté pan with the onion, carrots, and celery with a pinch of salt and cook until tender about 6 minutes and then add in the Italian seasoning and garlic and cook another 2 minutes.
Then add in the butter and chicken pieces and season the chicken with some salt and pepper and cook about 8 minutes until no longer pink. Next, add in the orzo with what ever broth is left in the pot to the chicken mixture and stir to combine.
Last, add a little more chicken broth if needed and the flat leaf parsley and serve. This dish is so easy and delicious, my family loves it!!!! 🙂
