Using a Spiralizer make "noodles" with the zucchini and set aside. Next, in a large saute pan add the oil, shallot and a pinch of salt and cook about 4 minutes and then add in the garlic and thyme cook another 2 minutes.
Then add in the mushrooms ( a bit more oil if needed ) and some more salt and pepper. Cook mushrooms for about 6 minutes and then add in the lemon zest and juice and cook another few minutes and then add in the zucchini noodles and Marscapone cheese. Cook everything while stirring it all around until the cheese has melted and top with basil and enjoy! 🙂
