  1. First marinate the chicken - add the cubes of chicken to a bowl and add the oil, fresh thyme, garlic powder and some salt and pepper and out in the refrigerator for at least 30 minutes.
  2. Next in a large pot add 2 of the boxes of the broth and bring to a boil and then add in the orzo and let it cook until the orzo is almost done. Meanwhile, in a mixing bowl add the eggs and juice of all the lemons and beat with a whisk until frothy -set aside.
  3. In another pot add the 1/2 box of broth and bring to a simmer and add the chicken and cook about 5 minutes in the broth and then drain the chicken and add the broth you cooked it in to the large pot of broth and transfer the chicken to a cutting board and shred it and set aside.
  4. Last steps! 🙂 Season the large pot of broth with the onion powder, Italian seasoning, celery salt and some salt and pepper and then grab your bowl with the lemon and eggs and start whisking it again and then ladle 1 cup of the hot broth from the large pot with a soup ladle while whisking into the egg mixture - do this about 3 times - "tempering the egg mixture" and then pour the egg mixture into the large pot still whisking and stir well to blend.
  5. Finally, add in the chicken and cook about another 8 minutes not boiling just on low to combine the flavors and serve!
  6. My boyfriend is Greek and insisted we make this soup and I am obsessed with it it is so delicious! 🙂
