Instructions
  1. Cook noodles to package instructions drain and set aside.
  2. In a large sauté pan add the butter, oil, onions, fennel and a pinch of salt and cook about 6 minutes until slightly tender - then add in the garlic and cook another 2 minutes.
  3. Next add in the chicken pieces, thyme, fennel fronds, and some more salt and pepper and cook until the chicken is no longer pink on the outside but not all the way cooked.
  4. Next add in the flour and cook about 2 minutes to get the raw flour taste out and then add in the chicken broth, peas, mushrooms , milk and some more salt and pepper and stir to combine and then add in the parmesan cheese and the Colby cheese and mix to combine and cook a few more minutes until the sauce starts to thicken.
  5. Last, add the noodles and the lemon juice to the pan and mix well again to combine and then transfer to a baking dish sprayed with cooking spray. Top the casserole with the bread crumbs and 1 extra tablespoon of the parmesan cheese and then spray the top with a bit more of the cooking spray
  6. Bake at 350 degrees for about 25 -30 minutes until the top is lightly golden brown and enjoy!
  7. My daughter LOVES this recipe!!
