In a pot put in water, 3/4 cup chicken broth and a pinch of salt and cook pasta in it according to package instructions- drain and set aside but do NOT rinse
In a pan on medium heat add the shallot and cook about 4 minutes until tender and then add in the asparagus, garlic powder and some salt and pepper and cook about 3 minutes and then add in the chopped tomatoes and chicken and cook another 3 minutes
Then add in the pasta, the rest of the chicken broth (add more if needed ) , lemon juice and some more salt and pepper to taste and cook until warmed through, transfer to a plate and enjoy!
This dish is extremely light, but it's so delicious and I make it when I'm trying to eat really clean! 🙂
