In a large skillet add the olive oil and ground turkey and cook until no longer pink. Then add in the taco seasoning and cook another 2 minutes and then add in the broth, pasta and salsa and mix to combine.
Next, cover the skillet with a lid and cook about 15 minutes until the pasta is tender and the liquid is gone - check on it halfway and give it a stir.
Last, add in 3/4 of the cheese and turn off the heat and stir until the cheese is melted. The best part is to serve it and top it with more cheese, sour cream and cilantro and enjoy! 🙂
