  1. In a small bowl add the mustard and lemon juice stir and set aside. In another bowl add the melted butter, parsley, garlic, bread crumbs, parmesan cheese and salt and pepper and mix to combine. If it looks a little dry add a little extra virgin olive oil also - I usually do.
  2. Next brush the mustard mixture on both sides of each chop and top each side with some of the breadcrumb mixture and place on a baking sheet lined with foil and sprayed lightly with cooking spray and bake at 500 degrees for 11-15 minutes until medium to medium rare. The smaller the chops are they will take about 11 minutes - if they are thicker they will take a few minutes longer.
  3. These are amazing and were a hit on Christmas day! 🙂
