Instructions
  1. In a mixing bowl add the mayo, dijon, juice of half the lemon and some salt and pepper and whisk to combine - Next add the chicken pieces to the bowl and toss to coat all the chicken pieces evenly
  2. Next add the bread crumbs to a bowl and toss in the chicken pieces a few at a time and coat each piece with the breadcrumbs
  3. Next add the breaded chicken pieces to a baking sheet sprayed with the olive oil spray and then spray the tops of the chicken with some more of the olive oil spray - this will help them brown in the oven
  4. Bake them at 425 degrees for about 15 minutes or until done - to get them extra crispy I turn the oven to broil for a minute or two after they are done cooking. Enjoy!
  5. My daughter likes to dip these in marinara sauce but they have so much flavor they are good without it too!!
