  1. In a pot add 3 cups of water with some salt and bring to a boil - add the pasta and cook according to package - drain and set aside ( I had pasta left over from day before this recipe is great for finishing up cooked pasta in the refrigerator ) 🙂
  2. In a food processor add - 1 cup of diced tomatoes, 1 cup cannellini beans, basil, garlic clove and some salt and pepper and pulse until smooth
  3. In a pan on medium heat add the olive oil and then the sauce mixture and heat thoroughly about 5 minutes then add in the cooked pasta and chicken stock ( could use water too ) and cook about 5 minutes until everything is combined and then add in some of the diced tomatoes left over from the can and some of the cannellini beans too and stir and toss until everything is warm and serve!
  4. Can add parmesan cheese and more basil to the top when done but this is optional - This is so simple but so good!
