  1. Add peanut oil to a sauté pan with the onions and garlic and cook about 4 minutes and then add in the ground pork with some salt and pepper and cook until no longer pink. Then add in the vegetables, a pinch more salt and pepper and cook another 3 minutes until everything is combined.
  2. Next add in the softened noodles and the chicken broth, soy sauce, rice vinegar and hot sauce and stir and cook until liquid has reduced a little and everything is combined .
  3. Last, transfer to a serving bowl, top with toasted almonds and enjoy! This dish is so easy and delicious I make it for lunch all the time! 🙂
