Cut the head of cauliflower into florets and then slice each floret and place on a large baking sheet. Next, add the sliced shallot and garlic pieces.
Then add the olive oil over everything and and toss all-around to coat evenly, add the thyme sprigs all around the top and season with kosher salt and black pepper.
Pre-heat the oven to 400 degrees and roast for about 25 minutes and then open the oven and stir the cauliflower around. Next, sprinkle with 1/3 cup parmesan cheese and roast the cauliflower for 10-15 minutes more and enjoy!
