  1. Wash potatoes and dry them then add them to a mixing bowl and add in the olive oil, garlic and some salt and pepper and toss all around to combine.
  2. Next, transfer the potatoes to a baking sheet and roast at 400 degrees for 30 minutes I open the oven and toss them around half way through.
  3. The last few minutes I open the oven and toss around the chopped parsley and then transfer to a serving bowl and enjoy! 🙂 This recipe is a very easy weekday or weekend side dish!
