  1. Pre- heat oven to 375 degrees - and spray baking dish with olive oil - then in a large mixing bowl put the sweet potato slices in and add the melted butter ( use microwave) , thyme, garlic and some salt and pepper and mix well to coat all the potatoes slices
  2. Next layer the bottom of the baking dish with half the potato slices and then add 1/4 cup of the cheese blend and then top it with another layer of potatoes and top that layer with the other half of the cheddar cheese blend
  3. Meanwhile in a small pot on the stove add the milk, flat leaf parsley and a pinch of nutmeg and bring it to a boil - then pour the mixture evenly over all the potatoes
  4. Last top with the parmesan cheese and bake it for about 35-45 minutes until top is golden and serve! This is such a great side dish with my pork tenderloin recipe 🙂
