In a mixing bowl add the olive oil, oregano, garlic powder and some salt and pepper and mix well. Then add in the shrimp and let marinate in the refrigerator for 15 minutes if you can - if not just cook right away
In a pan on medium heat add the shrimp and cook about 2 minutes per side and then add in the tomatoes, garbanzo beans, flat leaf parsley, juice of a lemon and some salt and pepper and cook until everything in mixed and warmed through
Top with feta cheese and serve! I make whole grain couscous on the side because it takes 5 minutes 🙂 and it delicious! This dish is so fast and easy, perfect for a weeknight dinner!
