  1. The first step can be skipped - my slow cooker the inside comes out and can be placed on the stove top first and then placed inside the base. So I add in the olive oil and the chopped onion, celery, carrots, fennel and some salt and pepper and cook for about 6 minutes and then add in the garlic for another 2 minutes and then transfer to the base.
  2. Next, add in the chicken breasts and season them with salt and pepper. Then add in the herbs, bay leaf, parmesan rind, lemon zest and juice and chicken broth and cook on high for 3 and 1/2 hours. ( at this point you can take out the chicken and shred it with 2 forks and place back in the slow cooker )
  3. The last 30 minutes add in the rice and a bit more salt and pepper and continue to cook. When the 4 hours is up, check to make sure the rice is fully cooked and then add in the chopped spinach and and cook for about 5 more minutes and serve. ( take out the parmesan rind before serving)
