Instructions
  1. For the Soba Noodles: Add them to a pot of UNSALTED boiling water and cook them for 7 minutes - then drain them and transfer them to a bowl of cold water and with your hands move them around for a minute or so and then put them back into the colander and rinse with cold water again. Set aside.
  2. Meanwhile, add the olive oil to a hot sauté pan and season the chicken pieces with salt, pepper and the garlic powder and cook them for about 4 minutes on each side until they are browned and cooked through - then take them out of the pan and set aside. Cover to keep warm.
  3. Then in a mixing bowl add the peanut sauce ingredients and mix well. Next add that sauce into the same sauce pan you cooked the chicken in and add in the 1/2 cup chicken broth, soba noodles, chicken, carrot, cucumber, half the scallions and the edamame and cook for a few minutes to warm everything and serve!
  4. I top this with cilantro and some extra lime wedges and it is so delicious!
