Place squash cut side up on a baking sheet and sprinkle with salt and pepper and a drizzle of extra virgin olive oil. Roast about an hour or until the skin gets tender and you can stick a butter knife in it.
Then take the squash out and with a fork scrape the inside to make strands of the squash.
In another pan add the chopped sausage and brown it in the pan for a about 5 minutes and then set aside.
Next, add the chopped basil, sausage and mozzarella to each boat and a bit more salt and pepper and then put them back in the oven for about 8-10 minutes until the cheese has melted and serve! 🙂
