  1. In a pot on the stovetop add the potatoes and cover them with water and a pinch of salt and boil them until until they are fork tender about 12-14 minutes. Once they are done, drain the potatoes and rinse them with cold water and then cut them in half. Then carefully with a small spoon scoop out middle inside of each potato half, leaving a little around the sides.
  2. Next, in a large mixing bowl add the potato insides, butter, sour cream, green onion, both cheeses, and some salt and pepper and mix well to combine.
  3. Then fill each small potato half with the potato mixture and place them on a baking sheet that has the olive oil brushed all over it and top each one with a sprinkle of paprika and a touch more shredded cheese.
  4. Make sure your oven is pre-heated to 350 degrees and bake the potatoes for 20 minutes. You can also make these ahead of time and then bake them off right before serving. 🙂
  5. Last, transfer these delicious potatoes to a serving tray and enjoy! These are a hit for parties, to watch football or even for a week night meal because kids love them!
