Grilled Teriyaki Shrimp

Instructions
  1. For the Shrimp: Add shrimp to the marinade and add a pinch of salt and pepper and marinate in the refrigerator for at least 30 minutes. Then put them on metal skewers and grill for about 3 minutes per side and set aside and keep warm.
  2. For the Pasta: Boil the pasta to package instructions and set aside. In a large sauté pan add 1 tbsp of the oil and the shallots and cook for about 4 minutes and then add in the garlic and cook another 2 minutes.
  3. Next, add in the cooked pasta, broccoli, chicken broth, herbs and some salt and pepper and cook for about 5 minutes and then add in the chopped tomatoes, cheese, lemon juice and the rest of the olive oil and toss and cook for another few minutes and serve with the shrimp on top!
  4. This is a light and easy dish perfect for spring and summer! 🙂
