  1. In a saute pan add the shallot, 1 tbsp of the olive oil and some salt and cook for about 4 minutes and then add in the garlic, zucchini, thyme, juice of a lemon and some more salt and pepper and cook for another 6 minutes until everything is soft.
  2. Next, add the rinsed beans, and zucchini mixture and parsley in a food processor and pulse until smooth, adding the rest of the oil slowly as you pulse. Continue to pulse until you get a smooth consistency and check it for seasoning adding more salt and pepper as needed and serve! 🙂
